Chicken Enchiladas

INTRODUCTION: Chicken enchiladas are a deliciously comforting dish that brings a taste of Mexico right to your table. This classic meal features tender, shredded chicken wrapped in soft corn tortillas, smothered in a rich, spicy sauce, and baked until bubbly with melted cheese on top. Ingredients:
- 1 cup chopped onion
- 1/2 cup chopped green pepper
- 2 Tbsp butter
- 1/4 cup chopped green chilis (optional)
- 2 cups chopped cooked chicken
- 1/4 cup flour
- 3/4 tsp. salt
- 5 cups chicken broth
- 1 cup sour cream
- 3 cups Monterey Jack cheese
- 12 6-inch tortillas
- 3 Tbsp butter

Instructions:
1. In large saucepan, cook onion and green pepper in 2 Tbsp butter until tender. Combine mixture with green chilis (if you choose to use them) and chicken in a bowl and set aside.

2. In the same pan, melt 3 Tbsp. butter, stir in flour and salt, add broth and heat until thickened. Remove from heat, stir in 1/2 the cheese and sour cream. Remove 1/2 cup of the sauce and add to the chicken mixture.

3. Fill tortillas with chicen mixture and cheese. Roll up and place in 9x13 pan. Cover with sauce and the remaining cheese.

4. Bake at 350 degrees for 25 minutes.
